
The Ribnica Trio (Ribn’ška trojka)
A traditional Slovenian stew where the star ingredient is the ribn’čan bean—one of the three indigenous Slovenian bean varieties. This specific bean is native to Hrovača, a village near Ribnica. Until recently, the village hosted an annual “Bean Day” festival, which has now found a new home as part of the famous Ribnica Fair.
As the name “Trio” suggests, the dish relies on three foundational ingredients: local red ribn’čan (Ribnica) beans, yellow carrots, and rutabaga (swede). Potatoes can also be added if desired.
RECIPE
Ingredients:

250 g dried red beans (ideally ribn’čan or kidney beans)

400 g rutabaga (swede), diced

1 kg potatoes, diced

200 g carrots (traditionally yellow), diced

1 large onion, finely chopped

3 cloves of garlic, minced

100 g pork cracklings (ocvirki)

1 tbsp pork lard

1 tsp ground paprika
